Pork Tenderloin with Roasted Apples & Onions

I made a fallish dinner tonight.... or at least my interpretation of an autumn meal.

I cut some yellow apple into wedges and a purple onion. I tossed with some olive oil, kosher salt and pepper. I baked at 450 degrees for about 15 minutes.

While that was baking I took 1/2 cup balsamic vinegar and 2 tablespoons pancake syrup (okay... I didn't have maple syrup so that was the next best thing). I let that boil for about 4 minutes until it reduced to a thick, dark sauce.

I sprinkled kosher salt and pepper on the pork tenderloin and then brushed some of the sauce on it. I placed on top of the apples and onions and baked for 20 minutes.... basting with the sauce about half way through.

I let the meat rest for about 10 minutes before slicing and drizzling the remaining sauce on top.

I served with oven roasted potato wedges and a fresh romaine salad.

Yes, apple and onions do go together very well. Becky use to do that with ham slices when she would sometimes fix dinner for us. And it was very good. Have a great week. Love you
