Hungarian Horse Shoe Cookies
Sift 4 cups of flour in a bowl. To this add ½ pound melted butter, 3 egg yolk’s unbeaten. Juice of 1 lemon with grated rind. Mix this like pie dough. In the meantime heat ½ cup of milk until luke warm and add to this 1 cake yeast and 1 Tablespoon of sugar. When the yeast has dissolved add this liquid to the dry mixture. Mix well and let stand for 1 hour.
After an hour your dough will be so smooth and elastic. And smell so good.
Next mix 2 pounds of ground fine walnuts with 1 ½ cups of sugar. Add the whites of eggs beaten to nuts until mixture reaches consistence for spreading.
On a board covered with sugar, roll out dough. Spread with nut mixture and roll into a horseshoe. Bake on greased sheets for about 20 minutes in a 350 oven until brown.
Instead of horse shoe shape, this year we made logs instead.
Fresh from the oven...
Top with confectioner’s sugar.
This recipe has been in my husband's family for years. The recipe he was given is worn and tattered. The recipe was from his great great grandmother and it's still a family favorite. And now it is my son's favorite cookie. (If you like walnuts, you'll love this recipe. Unfortunately my tongue reacts to walnuts... and it becomes too painful for me to eat).
