The making of a Maid-Rite

In the top of a double boiler, add:

1 pound hamburger
2 teaspoons prepared mustard
1 teaspoon sugar
1/2 teaspoon pepper



Mix thoroughly. The double boiler should be on medium heat and the idea is to cook your meat slowly, allowing the flavors to combine.



You will need to pull off 6 squares of wax paper. Place a hamburger bun on the center of one square and then squirt mustard on one of the bun halves:



Then top the mustard with dill pickles:



When the meat mixture is cooked, with no pink showing, season with salt. Don't salt until the meat has finished cooking.



Remove from heat and scoop out 1/4 cup to 1/3 cup of the meat on half of the bun (depends on the size of your bun). Top with chopped onions.



Then you will wrap each sandwich in the wax paper and place in a 350 oven for 5 to 7 minutes.



Naturally a visit to the maid-rite joint is better; but when you can't travel to Greenville, this homemade version comes pretty close to the real thing.

These are good, but you still can't beat the ones direct from the good ole Maid Rite Joint.
