April 2, 2011 - Chicken Salad


Today I tried a new recipe for lunch. It was a chicken salad recipe that Emily had shared with us last week. Since I normally make chicken salad with Miracle Whip and I usually enjoy a sweet chicken salad.... I was surprised how much I liked this recipe since it's not sweet.

3 cups chopped chicken breasts (I poached mine, but the recipe calls to roast them)
1/3 cup chopped green onions
1/4 cup chopped pecans (recipe calls for smoked almonds)
1/4 cup plain fat-free yogurt
1/4 cup mayonnaise (recipe calls for light)
1 teaspoon dijon mustard
1/8 teaspoon salt
1/8 teaspoon pepper

I think golden raisins would be really good in this chicken salad and will try that next time. I also think chicken on the bone would make the chicken more juicy.

This recipe is fast and easy and quite tasty. Enjoy!

Sounds like the one McMaken's Deli has, they have two kinds, the sweeter with the pecans and one that says it's garlic, that is really flavorful.
