1st Week Challenge - Prepare 7 Healthy Meals this week

So I challenged myself last Wednesday to prepare 7 healthy meals at home instead of going to a restaurant.  Tonight's dinner was dinner #5.

This is what I made this week:

June 26th - Provencal Chicken and Vegetables

June 27th - Masala Shrimp Kebabs with Yogurt Sauce

June 28th - Grilled Steak Salad

June 29th - Grilled Pork Chops and Grilled Zucchini Salad

and tonight - June 30th - Lemon Grilled Chicken with a Tomato Salad topper

The recipes came from either a Weight Watcher's cookbook or the magazine "Cooking Light".

So far every recipe has been good and fast and very flavorable.  I must say I'm eating lots of salads, veggies and fruits.  I guess it's all about fiber, fiber, fiber.

Thanks Olivia. I'm really trying to do different things so the family doesn't get burned out on grilled chicken and salad.
